Easy Chicken Kebab Recipe
Sometimes its difficult to find straightforward, easy quick recipes that are genuinely tasty and satisfying. And yet making great meals really doesn’t have to be complicated or time consuming. Jerry, a reader of Penny’s Recipes, has shared his favourite tried and tested, easy kebab recipe. If you are looking for a simple and quick supper dish that’s really yummy, this one is for you. It only takes about 5 minutes preparation time and consists of only a few ingredients, but it is really delicious. It is also a delightfully different way to cook chicken breast and sausages.
The concept of kebabs – putting small pieces of meat with other food – is thought to have originated in Turkey and spread to the Middle East. It was a convenient way to cook small pieces of meat over an open fire and as such is an ancient practice. Homer’s Odyssey mentions grilling strips of meat on a skewer. And of course the variations in the combinations of meat, and other ingredients, are many.
Kebabs are often associated with outdoor cooking on a barbeque or being grilled or placed in the oven, if indoors. These kebabs however, are simply cooked in a large frying pan in a sauce of olive oil and wine. they are made from pieces of chicken breast and good quality sausage with some vegetables.
As Jerry suggests in the video, it is recommended that you use good quality pork sausages with a high meat content. Try your local butcher or farmers market. It makes all the difference to the taste.
Peppers add sweetness and texture to the kebab. Both red and green are used in this recipe, but do use the type of pepper you prefer or that you have available – even a yellow or orange pepper. They all cook well on a kebab. You can add further spice if you wish, especially if you would like a more Middle Eastern flavour, but they are completely delicious as they are. You could of course, also use a good stock instead of the wine.
You do need a large, quite deep, frying pan that your skewer sticks can fit into and that has a well fitting lid.
These kebabs are served with ciabatta bread, the type you buy partly cooked, and finish of in the oven so that you get all the fresh flavour. The kebabs could be served with potatoes and a green vegetable or salad or even rice.

Jerry’s Kebabs – Serves 2-3
Jerry’s Amazing Kebabs
- 4-5 tablespoons olive oil
- 2 chicken breasts with skin
- 2 pork sausages
- 1 onion
- 1 red pepper
- 1 green pepper
- A glass and a half leibfraumilch wine
- salt and pepper to taste
- Cut the chicken into bite size pieces, leaving skin on
- Slice the sausages into bite size pieces
- Peel and chop the onion
- De-seed the peppers and chop into small pieces
- Place all the ingredients evenly spread on long skewers
- Heat the olive oil in a large frying pan
- Place the kebabs in the frying pan and leave to cook for 2-3 minutes
- Turn the kebabs and cook for a further 2-3 minutes
- Add the white wine
- Season with salt and pepper
- Cover and cook for a further 10-15 minutes
- Meanwhile prepare vegetables, salad and /or bread
- Serve immediately
