I am always on the look out for new ways to make the evening meal simple and easy – yet delicious and nourishing too. So when Simply Cook got in touch and asked me to try out their new scheme to make cooking delicious meals, easy I couldn’t resist – as it sounded really good! They offer recipes and ingredients for dishes from all over the world. So you not only get an easy to cook supper – you get an introduction to world cuisine!

What Do You Get?
Basically you get a box that contains four recipe cards and four small boxes packed full of spices, one box for each recipe. The recipe card gives you a shoppping list of the ingredients you need to buy – usually just 4-6. All you then do is follow the clear instructions and you have a restaurant quality meal in 15-20 minutes. I liked the idea because the recipes are simple and yet the flavours are great! So it is cooking from scratch but with all the flavouring and spices done for you!
Low Cost Too!
The two recipes I have tried so far were cost between £3 and £6 each for two people. The amounts are generous and could easily be stretched to three people with a little extra of all the main ingredients, and even to four with a little imagination. The spice flavours are good and strong so you do get authentic flavours.
Easy to Adapt
The recipe cards suggest additions of added ingredients and substitutions and are written in a way to encourage you to add your own flourish. I think they act as a good way to teach you new recipes that you could adapt and change yourself.
The resulting meals would be lovely to serve up at a special meal for 2 so are ideal if you are entertaining and want to make sure everything is just perfect. Or treat your friend or loved one (or yourself!) even if you have had a had hard day and are tired because these meals are just so easy to prepare!
It gets you to try some recipes you may not have even heard of or at any rate were rather daunted to give it ago. Once you get the hang of them you might even try variations of them with out the spice boxes (but they might not taste quite as good!) So it is a useful learning tool as well as a way of creating easy and tasty meals!
Bokkeumbap is a Korean fried rice dish. It is great for using leftover vegetables in a deliciously spicy way! This recipe suggest cabbage but you can use any vegetable or a mixture and even add some leftover cooked meat if you like too. Top it all with a fried egg and you have a tasty supper that seems too good to be true considering how long it took to cook!
I followed the recipe as given but added some leftover butternut squash too. You can find the details of this recipe on the Simply Cook website
What You Get
As well as the recipe, you get 3 spices – Garlic Paste, Gochujang and Doenjang. If you want to know the ingredients of the spice pots – just look at the bottom of the recipe card.
Cooking The Recipe
You only need 4 ingredients in addition to the spice pots – although you can add some more vegetables or meat if you wish. Even with the basic ingredients it served two people very generously.
Easy to cook, looks like it is supposed to and tastes delicious – full marks Simply Cook!
Moqueca de Peixe
Moqueca de Peixe is a Brazilian recipe – a fish stew cooked in spicy coconut milk and served with rice. Easy to prepare and completely delicious! The ingredients required are sea bass, rice, 1 pepper, onion tomatoes and coconut milk and of course the spices. You can use any fish you like really as an alternative. Really delicious and yet very simple.
