Lentil Salad

Ingredients
  

  • 500 g puy or green lentils
  • 1 red onion peeled and diced
  • 150 g sultanas
  • 6 tablespoons olive oil
  • 5 tablespoons cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 2 teaspoon pepper
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon nutmeg

Instructions
 

  • Put the lentils in a large saucepan and cover with boiling water
  • Bring to the boil and simmer for about 20 minutes until tender but not too soft
  • Meanwhile place all the spice ingredients in a jug and mix thoroughly
  • Drain the lentils and place in a large bowl
  • Stir in the onion and dried fruit
  • Stir in the vinaigrette
  • Allow to cool completely
  • Cover and refrigerate
  • Remove from fridge 30 minutes before serving
