Apple Meringue Recipe

Equipment

  • Lasagne type baking dish

Ingredients
  

  • 450 g cooking apples peeled and sliced
  • 1-2 tablespoons water
  • 1-2 tablespoons sugar
  • 3 eggs separated
  • 150 g caster sugar

Instructions
 

  • Pre-heat the oven to 180 degrees C
  • Place the peeled and slice apples in a saucepan
  • Add the water and sugar
  • Over a medium heat, gently cook the apples until soft
  • Remove from heat
  • Gently stir in the egg yolks
  • Set aside to cool
  • Whisk the egg whites until stiff
  • Add the sugar a little at a time whilst still whisking until smooth and stiff
  • Grease a baking dish
  • Place the apple mixture on the bottom
  • Spoon the meringue on top
  • Bake in the oven for about 30 minutes, until the meringue is brown.
