Sausage Cassoulet

  • 1 tablespoon sunflower oil
  • 8 good quality sausages meat or veggie
  • 2 sticks celery sliced
  • 2 large carrots peeled and sliced
  • 1 large onion peeled and chopped
  • 2 cloves garlic peeled and chopped
  • 400 g chopped tomatoes
  • 300 ml stock
  • 1 tablespoon tomato puree
  • 1 teaspoon mixed herbs or thyme
  • 1 bay leaf
  • 400 g can mixed beans drained
  • 400 g can chickpeas drained


  • In a large saucepan, cook the sausages, frying them in their own fat, adding a little oil if required
  • Cook for about 10 minutes, turning occasionally until lightly brown
  • Add the onions to the sausages pan and cook until soft stirring regularly
  • Add the garlic to the pan with the sausages and onions and cook for 3-4 minutes
  • Add the tomatoes, stock, herbs and tomato puree
  • Add the beans
  • Add the bay leaf
  • If your frying pan has a lid, put it on and put it in the oven or transfer the contents to a casserole
  • Cook on the bob for about 40 minutes
  • Serve hot with mashed potato and a green vegetable
