I am on holiday in Cornwall this week, with my husband. On the way we visited Trerice National Trust property. It is an Elizabethan Manor house set in the countryside and really quite delightful. It has pretty gardens, including a kitchen garden, planted and maintained by a local primary school with quite a variety of vegetables and salad leaves. There is an orchard too.
We were tempted into the restaurant for a coffee and their recommended Lemon Meringue pie, which did look delicious, although slightly too much meringue and not enough lemon at first glance.
We just bought one piece between us, owing to the size of the piece and the time of day (which was late morning). The meringue was soft with a crisp crust and delightfully not over sweet. The lemon bit could have been a lot more lemony.
So now on my return to home, one of the first things that will go on my list of things to cook will be Lemon Meringue Pie with just as good a meringue, but a better lemon bit.
