Home Made Ready Meals

When we go on holiday, we usually go self-catering, and this holiday is no exception. We enjoy the freedom of self catering, and the space and the pleasure of choosing the exact location we want to be in.

When it comes to food, it is good to eat out once or twice but this can end up being quite expensive. Also because we like quite remote places we don’t always want to be travelling back far, late at night.

Cooking And Freezing

In order to ensure I don’t spend time cooking that I could be spending out exploring, I cook sufficient extra meals the week or two before to freeze, and then bring with us. That way we get ‘home cooked ready meals’.

It is something I do when at home too. I often cook twice as much as we will eat then to put half in the freezer in an individual portion or as a meal for two. When schedules are busy and someone needs to have a meal at a less convenient time, there is always something to heat up. The same goes for when there isn’t time to cook a meal from scratch.

It is also economical, since heating up uses less energy than cooking from scratch. Many recipes also benefit from reheating as the flavours can be more enhanced.

So tonight we are having vegetarian lasagne. We have been out walking today on the cliff, which was wonderful. I will be having a bath to ease my aching muscles and can put the lasagne in the oven to reheat while I soak. We will be serving it with some delicious organic salad leaves from Real Food Exeter.
